Cherries, which come in varying, beautiful hues of red, are a firm-fleshed berry with a flavour that’s both sweet and tangy.

How to choose

Select fleshy cherries with shiny skin, without bruises, and green stems solidly attached to the fruit (a sign of freshness).

How to store

Cherries will keep for approximately three days at room temperature, or five days in the refrigerator in an airtight container. Ideally, take them out of the refrigerator about 20 minutes before eating to restore their full flavour.

How to eat

To pit your cherries, remove the stem and make a small x-shaped incision in the opposite end. Expel the pit through the incision by pushing it with small wooden pick. Delicious as is, cherries and clafouti are a match made in heaven!
