Ingredients

1.5 lb
flank steak
675 g
Steel skewers or wooden skewers dipped 30 minutes in water
Fresh herb sauce
1/2 cup
basil
125 ml
1/2 cup
parsley
125 ml
1/2 cup
cilantro
125 ml
1/2 cup
olive oil
125 ml
1/4 cup
pitted green olives (optional)
60 ml
1/2 tsp.
pepper flakes
2 ml

green onions, coarsely chopped
1
clove of garlic, peeled
Zest of 1/2 lemon
Salt and ground pepper

Directions

Step 1
For the herb sauce, blend all the ingredients together in a mixer or blender until smooth. Season and transfer to a bowl. Set aside.
Step 2
Slice the flank steak into strips and skewer. Coat with half the sauce, saving the other half for serving.
Step 3
Preheat the grill to high and oil the grill. Cook the skewered meat 2 to 3 minutes on each side for a rare cook, or until you reach the desired doneness.
Step 4
Serve with the remaining fresh herb sauce, along with roasted potatoes and green beans or asparagus.
