 - 675 g
 
- Steel skewers or wooden skewers dipped 30 minutes in water
 
- Fresh herb sauce
 
- 1/2 cup
 - basil
 - 125 ml
 
- 1/2 cup
 - parsley
 - 125 ml
 
- 1/2 cup
 - cilantro
 - 125 ml
 
- 1/2 cup
 - olive oil
 - 125 ml
 
- 1/4 cup
 - pitted green olives (optional)
 - 60 ml
 
- 1/2 tsp.
 - pepper flakes
 - 2 ml

 - green onions, coarsely chopped

 - clove of garlic, peeled
 
- Zest of 1/2 lemon
 
- Salt and ground pepper
 
Directions
- Step 1
 - For the herb sauce, blend all the ingredients together in a mixer or blender until smooth. Season and transfer to a bowl. Set aside.
 
- Step 2
 - Slice the flank steak into strips and skewer. Coat with half the sauce, saving the other half for serving.
 
- Step 3
 - Preheat the grill to high and oil the grill. Cook the skewered meat 2 to 3 minutes on each side for a rare cook, or until you reach the desired doneness.
 
- Step 4
 - Serve with the remaining fresh herb sauce, along with roasted potatoes and green beans or asparagus.
