Directions

In a bowl, combine all of the ingredients. Set aside.

- Burgers
Preheat the grill, setting the burners to high.
- Step 3
- Using a pastry brush, cover an 18 x 13-inch (46 x 33 cm) baking sheet with the oil. Using a fork, spread the meat out on the baking sheet in an even layer. Sprinkle with the steak spice.

- Place the baking sheet on the grill. Close the lid of the barbecue. Cook for 7 to 8 minutes or until the meat is cooked through and the cooking juices have evaporated.

- Arrange the gouda and cheddar slices over the meat, alternating the slices in a checkerboard pattern and letting them overlap slightly, as needed. Close the lid of the barbecue. Continue to cook for 2 minutes or until the cheese has melted. Grill the buns.

- Slide the meat onto a work surface. Cut the meat into squares, following the checkerboard pattern of the cheese slices.
- Step 7
- Spread the mayonnaise sauce over the inside of the buns. On each bun bottom, place a lettuce leaf and tomato slice. Top with two squares of meat. Garnish with the pickles and chive cheese. Close with the bun tops.
Tips
In this simple yet mouthwatering burger recipe, you can use different combinations of cheese for an equally gourmet result. Swiss, raclette or goat cheese are all great options for this dish.
