- McIntosh apples, peeled, cored and cubed (about 6 small apples) (see note)
- 550 g
- ⅓ cup
- maple syrup or honey
- 75 ml
- 1 tbsp
- lemon juice
- 15 ml
- ½ cup
- cold unsalted butter, diced
- 115 g
Directions
- Step 1
- In a pot off the heat, combine the apples with the syrup and lemon juice. Cook over medium heat for 25 minutes or until the apples are very tender.
- Step 2
- In a blender, purée the apple mixture until smooth. Gradually add the butter, one or two pieces at a time, until smooth. Using a spatula, scrape down the sides of the blender as needed.
- Step 3
- Transfer the apple butter to an airtight container. Cover and refrigerate for 2 hours or until completely chilled. The apple butter will keep for 1 week in the refrigerator or 3 months in the freezer.
Tips
The McIntosh apples can be replaced with another variety of apple. In this case, adjust the cooking time, as needed, so that the apples are very tender. Add a bit of water to thin out the apple butter as needed.
