			Directions 
		
									
					Step 1 
											Boil potatoes in a saucepan until cooked, but still slightly firm. Drain, let cool in a large bowl, and grate.  
									 
							
					Step 2 
											Gently combine grated cheese and potatoes.  
									 
							
					Step 3 
											Heat oil in a large, heavy-bottom skillet. Put potato mixture into skillet in a single layer. Garnish with shallots and herbs. Season to taste.  
									 
							
					Step 4 
											Cook over medium heat, pressing down on potatoes with a spatula. When bottom is brown, divide into four pieces and gently turn over with spatula.  
									 
							
					Step 5
